Pure Maple Syrup is available in 3 table grades:
Delicate Amber – which is the lightest in color and has a delicate maple flavor. Formally known as Light Amber, Delicate Taste.
Rich Amber – which is one grade darker in color with more maple flavor. Formally known as Medium Amber, Rich Taste.
Robust Amber – which is still darker and has a hearty maple flavor. Formally known as Dark Amber, Robust Taste.
Extra Dark Amber – USDA Grade B. Now known as Very Dark Color, Strong Taste.
Syrup darker than Dark Amber with an acceptable flavor is “Extra Dark” for Cooking – also known as U.S. Grade B.
